Pancakes & Waffles: Cornmeal Griddle Cakes

2 c. buttermilk
2 egg yolks
1 tsp. baking powder
1 tsp. soda
1 c. cornmeal
1 c. white flour
2 T. melted shortening
2 egg whites
1 tsp. salt

Beat egg yolks and add buttermilk.  Add dry ingredients to liquid.  Beat until smooth.  Add shortening, then beaten whites.  This batter also makes delicious waffles.  This is from the Mennonite Community Cookbook.
