Pancakes & Waffles: Waffles

Sift together 1/2 cups flour, 3 teaspoons baking powder and 1/4 teaspoon salt.  Separate 2 eggs, putting yolks into large mixing bowl, and whites into small mixing bowl.  Beat egg whites until stiff.  Beat yolks and add 1/4 cup melted shortening and 1 cup milk, mixing well.  Gradually add dry ingredients, mixing well.  Carefully fold in egg whites.  Bake in preheated waffle iron, and serve with butter and maple syrup.
