1 1/2 lbs. ground beef
3.4 pkg. taco seasoning mix
1 lg. can tomatoes, drained
4 oz. shredded taco or Cheddar cheese
Brown beef and drain grease. Add seasoning mix, chopped tomatoes, and a small amount of the juice. Simmer for 10 to 15 minutes. Prepare corn muffin mix. Pour into a 9x9-inch baking pan. Spoon mixture over batter. Top with cheese. Pass sour cream and taco sauce when served. Bake for 25 minutes at 400.
Taco Sauce:
1/2 c. catsup
1/2 tsp. chili powder
1/2 tsp. Tabasco sauce
Mix well.
