Cake: German Apple Cake

4 c. sliced apples
2 c. sugar
2 c. flour
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 T. vanilla
3 eggs
1 c. oil
3/4 c. nutmeats

Slice apples thin.  Sift together the flour, soda, spices, salt and sugar.  Beat eggs, vanilla and oil until foamy.  Mix together with flour mixture.  Add nuts and apples.  Place in greased and floured 9x12-inch pan.  Bake at 350 for 45 to 60 minutes.  Serves 12.  Note: It's best to use a tart apple.  Can be iced with your choice or a glaze.  Also good served warm with whipped cream.
