1 c. plus 2 T. white sugar
1 egg
1/2 tsp. vanilla
1/4 c. cocoa
1 1/2 c. cake flour
1 tsp. soda
1/2 tsp. salt
1 c. buttermilk
Cream first four ingredients, then add the dry ingredients alternately with buttermilk. Beat for two minutes. Bake at 350 for 30 to 35 minutes, using an 8-inch square pan, or makes 18 cupcakes.
