2 c. cheddar cheese, shredded
1 egg yolk
1 egg white, stiffly beaten
30 (1 1/2") squares of sliced white bread (I use LaBrea French bread/baguette)
30 shrimp, cooked and cleaned
Cream butter and cheese together, then blend in egg yolk. Fold in stiffly beaten egg white. Arrange bread squares on an ungreased cookie sheet. Top each with a shrimp and cover with a rounded teaspoonful of cheese mixture. Bake at 350 for 15 to 18 minutes, until golden brown.
Recipe Note: May be refrigerated for up to 24 hours before baking.
